My kids love this Veggie Pita Bread Pizza and my daughter often requests this for her lunch box.

It’s such an easy lazy yet delicious option when you are craving pizza. The pita bread makes the perfect crust or pizza base since it’s not too thin nor too thick and bakes perfectly! For this post, I’m sharing a Vegetarian pizza with no-cook pizza sauce. Yes, you read it right, no-cook!! When I say easy and lazy, I truly mean it!! This pita pizza is very much customizable. So you can switch the toppings or sauce to your choice. You can make it just a cheese pizza or margarita or even with meat toppings. In fact, it is just so apt for a “Make your own Pizza” party where you lay down the topping options, and kids can make their own pizza and relish it!!

Ingredients for making Veggie Pizza

Pizza Base:  As the title suggests, we are going to use Pita bread as a pizza base and save tons of effort without comprising the taste or texture of our pizza. Pizza Sauce: For the homemade pizza sauce we will use tomato sauce, dry oregano, Italian seasoning, salt, pepper, garlic (minced or powder), onion powder, and sugar. Alternately you can use your favorite storebought pizza, marinara, or pesto as a pizza sauce too! Toppings: you can use any veggies of your choice. I’ve used onions, bell pepper, mushrooms, black olives, grape tomatoes, frozen corn kernels, and pickled jalapeños. Cheese: The most important! Use good quality mozzarella cheese or any cheese of your choice.

Step by Step Method for making Veggie Pita Bread Pizza:

Line a baking tray with aluminum foil. Preheat the oven to 400° Fahrenheit. 1 - To make the pizza sauce, in a mixing bowl, add all the ingredients listed for pizza sauce - tomato sauce, oregano, Italian seasoning, salt, pepper, garlic paste, and sugar. Mix well and keep aside. This can be made ahead of time and even frozen. 2 and 3 - Take a pita bread spread 2 tablespoon pizza sauce on each pita bread followed by half cup of mozzarella cheese (or as much needed). 4 to 7 - Add the toppings, red onions, red and green bell peppers, mushrooms, corn and black olives, jalapenos, and tomatoes. 8 - Sprinkle some salt pepper, oregano, and red chili flakes (optional). Transfer it to the lined baking sheet and to the oven and bake it for 15 minutes or until the cheese is melted and starting to turn golden brown. You can also broil it for 1-2 mins. Alternately you can air fry the pizza at 370° F for 5-7mins. Remove from the oven and let it rest on the tray for another 5 mins. Slice it into 4 triangles and serve immediately. Enjoy!!

Storage Instructions

Pita Pizza is best served fresh and warm. You can make this sauce ahead of time and it stays good stored airtight in the refrigerator for up 4-5 days or you can freeze it for longer use. Prep the veggies ahead of time too but assemble and bake or air fry just before serving. Leftovers can be stored in the fridge in an airtight container for 2-3 days. Reheat in the oven at 350°F until hot or air fry at 370°F for 2-3 mins or until hot.
