If you didn’t know, we’re a family of Disney nerds, yes I know! We have the Spirit Jerseys, the Loungefly bags, listen to the music at home, and believe it or not we actually have room sprays that smell like the different resorts at Disney World – which is possibly our favourite place on earth! Plus my husband and my daughter are always competing over who knows the most obscure Disney facts. 😆 I love recreating some of our favourite Disney food, like the Buffalo Chicken Spring Rolls! (and there may be more coming soon! 😉) They were so delicious and brought me right back to walking down Main Street with the fireworks! This is my copycat version of the famous Totchos from Woody’s lunchbox in Hollywood Studios, Disney World. Salt – I only used a little bit of salt in the beginning as there is salt in both the stock cube and possibly the Fajita seasoning depending on the brand. You can always add more during the simmering stage if you need it. Fajita Seasoning – This can be found at most supermarkets in the spices section. If you can’t find it, then taco seasoning also works, but it’s usually a little spicier, with a bit more of an oregano taste. Or you could replace with Cajun seasoning, which is also a little spicer (spicier than both the fajita and taco seasoning).
Hash brown bites and fixings
Hash Brown Bites – These tasty little morsels are barrel-style hash brown bites. There are a few places where you can find them in the UK:
Freezer section of Sainsburys (Sainsbury’s own version) Freezer section of Tesco for the Birds eye version. Morrisons do a smaller mini-hash brown bites version in the freezer section. You can also find cheesy hash brown bites (which will work fine) in the freezer section of Iceland and Morrisons.
Tortilla Chips – We used plain, lightly salted tortilla chips to add that crunch factor, any brand will do, Doritos will also work great! Although I’ve photographed it here on a large sharing tray, I absolutely recommend dividing between individual bowls to prevent fights! No-one shares this dish fairly! 😆 The slightly spicy, tangy flavours of the chilli pair so well with the crispy, golden hash brown bites!
A jacket potato and chilli is such a warming classic! Adding in some crispy chips to dip in the chilli is such a tasty swap. Another alternative to get that potatoey goodness are these smashed potatoes.
