Ingredients: 0.5 lb (pound) Linguine pasta or any pasta of choice¾ cup of oven roasted tomatoes (or to taste) ¾ to 1 cup of basil pesto sauce1 cup of grated parmigiano reggiano salt and pepper to taste Method:
Bring water to boil and season it well with salt. Now add the Linguine pasta and cook as per package instructions (approximately 10 mins), drain the pasta water reserving half cup of this starchy water which we will use to adjust the pesto consistency. Transfer the pasta back to the pot. Now add the basil pesto & roasted tomatoes to the cooked linguine. Add starchy water if required to adjust the consistency & mix well. As soon as the pesto comes in contact with the warm pasta you will get a nice aroma. Check the seasoning and add salt and pepper if required. Top it with grated parmigiano reggiano cheese reserving some for ganishing and mix again.
