My mom would make me these chili cheese toasts as an after-school snack; trust me, it was my favorite snack! Traditionally these toasts are slathered with a mix of grated amul cheese, butter, salt, black pepper, oregano, onions, and green chilies. Chili Cheese Toasts are delicious crispy toasts made with cheese, chilies, garlic, onion, cilantro, black pepper, salt, oregano and peppers. These chili cheese toasts are open sandwiches, but you can make chili cheese sandwiches too using the same recipe. Now I like to add garlic, and veggies like onions and bell peppers in this recipe along with Boursin cheese, but you can skip it. If you don’t have any soft cheese, don’t worry, you can skip it. I also like to add cream cheese, which tastes amazing in this recipe. If you want to make this recipe more nutritious, you can add vegetables like carrots, broccoli, and cabbage. I also like to red bell peppers in this recipe. Adding vegetables makes this recipe wholesome, and less guilty. My mom used to pack me these sandwiches for school, and now my daughter is getting good at eating sandwiches so I make her this sandwich, minus chilies and the garlic. And she loves it!
Ingredients To Make This Recipe
Bread - I am using sourdough bread, because it is healthier and tastier, but you can make this with any bread you have on hand. Chilies - I prefer to use Thai Green Chilies, but I have also used jalapenos, and serrano peppers. And they bring the same kick to the recipe. Vegetables - You can use or skip veggies in this recipe. I like the crunch of veggies in my toats/ sandwiches, so adding onions and peppers is a great addition. If you wish to make it healthier, add more veggies like carrots, cabbage, and broccoli. Garlic - Now, I know we don’t need garlic in this recipe, it just works as a taste elevator in this recipe, also because I love garlic. Skip it, if you don’t want to add it. Cilantro - Cilantro brings a smoky herby flavor to this recipe, and adding freshness to the recipe. Also, what’s Indian food without cilantro! Spices - I like to use salt, black pepper, oregano and red chili flakes to season the spread for the toasts. Butter - Butter adds a luscious touch to the amazing recipe! Cheese - I am adding both mozzarella cheese and Boursin cheese. You can also add cream cheese, and any other hard cheeses like Mexican, pepper jack etc. Use anything you have on hand.
Learn To Make Step-by-Step Chili Cheese Toasts
Take out the butter and cheese from the refrigerator. Let it soften, by the time you prep the rest of the ingredients. Start with prepping the vegetables. So I usually start with mincing the garlic. Then I move on to chopping my vegetables and chilies. Preheat the oven at 425F. And, Line a baking sheet with a parchment paper. Add Boursin/ cream cheese to the bowl. Next, add in the mozzarella cheese in the bowl. Now add the finely chopped chilies, and the vegetables. I am using onions, and bell peppers. Along, with this I add some minced garlic and finely chopped cilantro. Add butter, oregano, black pepper powder, and salt. Mix it all well with a fork. Now spread the prepared mix, on the slices of bread. Bake it in the oven at 425F for 10 minutes, or until the cheese melts, and the bread is crispy.
Serving Suggestions
These chili cheese toasts taste the best when served warm. I like to prepare the bread slices layered with the chili cheese spread and keep them in the refrigerator. I bake them right before serving. They taste the best when served hot out of the oven. I like to serve these chili cheese toasts with a side of ketchup, and mayo. I like to sprinkle some fresh cilantro and red chili flakes before serving. If you think, your guests or friends may not be able to tolerate the spice, I suggest instead of sprinkling red chili flakes, serve it on the side.
Storage Instructions
You can freeze the chili cheese toasts after preparing them. Let the toasts completely cool down. Place them on a baking sheet, and freeze them as is for two hours. After two hours, transfer them to a freezer-safe ziplock bag. Reheat them in the oven at 400F for 5-7 minutes.
